ΥΛΙΚΑ

  • 30 g Florina pepper, in small cubes
  • 30 g green pepper, in small cubes
  • 50 g dry onions, in small cubes
  • 60 g olives, finely chopped
  • 200 g peeled tomato, finely chopped
  • 180 g feta, in small cubes
  • 10 g capers, finely chopped
  • the leaves from 4 sprigs of mint, finely chopped
  • the leaves from 4 sprigs of parsley, finely chopped
  • small sprigs of thyme and a little olive oil (for serving)

Περιγραφή

Χάχλες are the traditional trahanas of Lesvos, made with sour milk and shaped like a “handful.” They are prepared with milk and wheat and shaped by hand. They took their name from their shape, as they resemble flat, oval, small saucers for coffee cups. They are usually filled with feta and served either lightly baked in the fireplace or in the oven, or broken into pieces and added to soups to make them more filling. The most famous χάχλες are those of Mesotopos in western Lesvos.

Εκτέλεση

Start by preheating the oven to 200°C. In a large bowl, put all the filling ingredients. Divide the mixture among the χάχλες and place them in a medium baking tray lined with baking paper. Bake for 8–10 minutes, until the χάχλες are lightly golden and the filling is cooked. Remove from the oven, drizzle the χάχλες with a little olive oil, sprinkle with oregano leaves and serve. Ideally accompanied by ouzo.

Venizelika of Limnos
After the liberation of Lemnos from the Ottoman yoke in 1912 and, subsequently, with its incorporation into the Greek state, the island was visited by Eleftherios Venizelos. After disembarking at Romeikos Gialos in Myrina, where a crowd had gathered to welcome him, he sampled the treats that had been prepared for him. Among other things, he showed a particular preference for a small white fondant, filled with walnut and almond. And thus, the little fondants with white icing came to be called “venizelika” (Venizelos sweets).
