Handmade macaroni are the pasta that used to be made on Chios before industrially produced pasta arrived. The women of Chios made them by hand and, for this reason, they were called “handmade,” devoting time and patience to wrap them one by one around the broom twig. Besides their delicious taste, handmade macaroni also carry the stories they hear while they are being shaped!

In a bowl, add the flour, semolina, oil and salt. Pour in lukewarm water and knead until the dough becomes firm. Using the dough, form many balls of equal size. Take a long broom twig and begin rolling the dough around the broom with both palms. When the broom is shaped, a hole remains in the macaroni. Lay the macaroni out to dry and, the next day, they will be ready. You can also cook the macaroni immediately, perfectly fresh, in boiling salted water. A serving suggestion is to combine them with tomato sauce and grated aged myzithra cheese.
