- 20–25 zucchini blossoms
- 1 zucchini
- 1 egg
- 2 tablespoons flour (depending on the quantity of zucchini blossoms)
- myzithra cheese (2–3 tablespoons for the batter and some for sprinkling)

Tiganitelia, or zucchini flowers, are one of the most popular ouzo meze dishes of Lesvos, which one can enjoy as a guest in locals’ homes and in the island’s picturesque tavernas. Tiganitelia are fragrant zucchini fritters that you will encounter under various names on the island. Depending on the area, they are called tigantelia or tiganitelia, flowers, blossoms, zucchini flowers and zucchini fritters. From place to place, the recipe varies. Also, instead of mizithra, Mytilene feta or ladotyri or a nice aged island graviera is used.

Wash and drain the zucchini flowers and then cut them into thin strips in a small bowl. Grate the zucchini and add the egg, the cheese, the flour and the herbs, salt and pepper. Stir with a spoon. At first it is very dry, but as you stir, the zucchini and the flowers release their juices. It becomes a batter; if it is too runny, add one more tablespoon of flour. Put the pan with oil over medium heat to warm up, and drop spoonfuls of the batter into it. As soon as they brown on the underside, turn them over. When both sides are cooked, remove them from the pan and place them on a platter lined with absorbent paper. Sprinkle with mizithra cheese.
