ΥΛΙΚΑ

  • 500 g pure yellow Lemnos flour
  • 1 tbsp vinegar
  • 1/2 tsp salt
  • 1/2 cup olive oil
  • water
  • 350 g fresh Lemnos basket cheese or feta
  • 2 eggs, beaten
  • a little finely chopped mint (about 1/2 cup)
  • a little pepper

“Tyrop’toudia,” as the locals also call them, are small fried cheese pies, filled with fresh cheese and wrapped in a crispy pastry, which are eaten hot straight from the pan. On the island they are also called “f’lachtoudia” or “bochtsadelia,” because their square shape resembles the “bochtsas,” that is, the white kerchief that the Lemnian farmwoman tied on her head to protect herself from the wind and sun in the field.

For the dough, mix all the ingredients together except for the water. Gradually add water until the dough no longer sticks but is not too firm either. Leave it in a bowl covered with a slightly damp cloth on top while you prepare the filling. For the filling, grate the cheese and add all the other ingredients. Divide the dough into small balls, one for each little cheese pie. Cover the balls you are not working with a slightly damp towel. Roll them out into a square shape about 0.2 cm thick. Place a little filling in the center and fold the four edges together towards the center. Fry in olive oil until golden brown.

Venizelika of Limnos
After the liberation of Lemnos from the Ottoman yoke in 1912 and, subsequently, with its incorporation into the Greek state, the island was visited by Eleftherios Venizelos. After disembarking at Romeikos Gialos in Myrina, where a crowd had gathered to welcome him, he sampled the treats that had been prepared for him. Among other things, he showed a particular preference for a small white fondant, filled with walnut and almond. And thus, the little fondants with white icing came to be called “venizelika” (Venizelos sweets).
