  • 1 kilo eggplants
  • 1 large onion, finely chopped
  • 2 cloves garlic
  • a little mint, finely chopped
  • a little parsley, finely chopped
  • 350 g rice
  • salt & pepper
  • oil
  • finely chopped tomatoes

Cuisine from Chios is defined in part by the characteristic products the island produces. Eggplant pilaf is a tasty traditional recipe that comes from the villages of southern Chios.

Half an hour beforehand, put the eggplants in water to remove their bitterness. Drain them and cut them into small cubes. Sauté the onion and the eggplants in the oil. Add the tomatoes, the herbs, the salt and the pepper. Boil until cooked. Add the rice and a little water, if needed, and cook. Remove from the heat when the eggplant pilaf is still juicy, that is, when it still has its liquids.

Venizelika of Limnos
After the liberation of Lemnos from the Ottoman yoke in 1912 and, subsequently, with its incorporation into the Greek state, the island was visited by Eleftherios Venizelos. After disembarking at Romeikos Gialos in Myrina, where a crowd had gathered to welcome him, he sampled the treats that had been prepared for him.
