  • For the pastry:
  • ¾ kilo soft all‑purpose flour
  • 6 tbsp olive oil
  • 1 espresso cup Chios ouzo
  • lukewarm water (as needed)

Chios is famous for its delicacies, and one of these is kopanistopita, which is essentially a fried cheese pie made with a distinctive spicy cheese called kopanisti. It is also made in small pieces, called kopanistopitakia. Chios kopanisti is made from fresh Chian cheese and myzithra, and with the addition of salt it takes on a spicy flavor. The kopanisti cheese is a mixture that has been kneaded and has matured for quite some time. Its spicy taste makes it one of the best accompaniments for ouzo.

In a bowl add the flour, olive oil and ouzo and knead, gradually adding the lukewarm water until you have a pliable dough. Let it rest for a while and then divide it into small balls. Using a rolling pin, roll out each ball into a thin sheet on a floured surface. Cut into round or square pieces with a cutter and, using a brush, spread each sheet with the kopanisti cheese. Close the pieces by folding them in half and seal the little pies with a wet fork or with the special tool. Fry in hot oil until they turn golden. Serve hot or cold.

Venizelika of Limnos
After the liberation of Lemnos from the Ottoman yoke in 1912 and, subsequently, with its incorporation into the Greek state, the island was visited by Eleftherios Venizelos.
