  • 4 tbsp finely chopped fennel
  • 80 g taramas
  • 3 fresh spring onions, finely chopped
  • 1 large ripe tomato, peeled, finely chopped
  • 1½ cups flour
  • ½–2/3 cup water
  • oil for frying

Dissolve the tarama in half a cup of the water and put it in a medium bowl. Add the remaining ingredients except for the water and mix well. Gradually pour in as much of the remaining water as needed to make a thick batter. Heat the oil in a large frying pan and, when it is hot, drop in spoonfuls of the batter, making sure they do not stick to each other. Fry on both sides until golden. Remove the malathropites with a slotted spoon onto kitchen paper to absorb the oil. They are eaten hot.

Venizelika of Limnos
After the liberation of Lemnos from the Ottoman yoke in 1912 and, subsequently, with its incorporation into the Greek state, the island was visited by Eleftherios Venizelos. After disembarking at Romeikos Gialos in Myrina, where a crowd had gathered to welcome him, he sampled the treats that had been prepared for him. Among other things, he showed a particular preference for a small white fondant, filled with walnut and almond. And thus, the little fondants with white icing came to be called “venizelika” (Venizelos sweets).
