Traditional Samos Pancakes

  • 500 g self-rising flour
  • ¼ tsp salt
  • ½ tsp baking powder
  • 1 tbsp olive oil
  • 2 eggs, lightly beaten
  • 200 g yogurt
  • olive oil for frying
  • anthotyro cheese
  • honey
  • toasted sesame seeds

The shape of the traditional pancakes is reminiscent of the millstone that grinds the wheat. Pancakes are made all year round, as they are the easy and economical sweet that is offered at happy occasions and festivals, and they are also served in variations, with honey, dermatotyri, that is, tulum cheese, but also with grape molasses, for engagements and weddings.

Put the flour, salt and baking powder in a bowl and mix. Make a well in the center. Pour in the oil, the eggs and the yogurt. Mix very well with a hand whisk. If necessary, add a little milk if the dough is too stiff. Leave to rest for 30 minutes. Heat the oil in a frying pan. Take small balls of dough and press them flat, or roll out with a rolling pin into round pancakes. Fry in hot olive oil for about 2 minutes on each side, until they color. Leave to drain on kitchen paper. Serve with crumbled anthotyro, honey and toasted sesame seeds.

Venizelika of Limnos
After the liberation of Lemnos from the Ottoman yoke in 1912 and, subsequently, with its incorporation into the Greek state, the island was visited by Eleftherios Venizelos. After disembarking at Romeikos Gialos in Myrina, where a crowd had gathered to welcome him, he sampled the treats that had been prepared for him.
