Mackerel with sweetbreads (vinegar) and Samos muscat wine

ΥΛΙΚΑ

  • 3–4 mackerel
  • 200 g cherry tomatoes, cut in half
  • 200 g all-purpose flour
  • 200 ml olive oil
  • ½ cup Samos muscat wine
  • 1 packet baby spinach
  • 200 g small white mushrooms
  • 2 fresh onions, finely chopped
  • salt & pepper
  • 1 sprig rosemary
  • ½ cup local vinegar

After salting the fish, dredge them in flour and fry in hot oil. Deglaze with vinegar and Samos muscat wine. Once fried, remove them and place them on absorbent paper. Prepare the sauce by sautéing the onions and mushrooms. When they are ready, add the cherry tomatoes along with the spinach. At the end, add salt, pepper and, optionally, a little coriander with rosemary.

Venizelika of Limnos
After the liberation of Lemnos from the Ottoman yoke in 1912 and, subsequently, with its incorporation into the Greek state, the island was visited by Eleftherios Venizelos. After disembarking at Romeikos Gialos in Myrina, where a crowd had gathered to welcome him, he sampled the treats that had been prepared for him. Among other things, he showed a particular preference for a small white fondant, filled with walnut and almond. And thus, the little fondants with white icing came to be called “venizelika” (Venizelos sweets).
