ΥΛΙΚΑ

  • 1 kilo assorted greens (Swiss chard, Mediterranean hartwort, fennel, spinach, leek and anything else we like)
  • 2 kilos tambouras (pumpkin/squash)
  • 1 kilo all-purpose flour
  • 1 glass of water
  • 3 tablespoons oil
  • salt

The secret of the pie’s deliciousness is to use as many wild greens as possible. Greens are one of the secrets of longevity in Ikaria. The “Ikaria study” showed that its inhabitants love to consume anything their land produces, such as fruit, vegetables, legumes, potatoes and plenty of olive oil. Their great weakness is greens, which, apart from being eaten boiled with plenty of oil, are also used to make pies that form an integral part of their diet. Greens are known to be rich in antioxidants, so it is not at all surprising that they contribute to longevity.

Wash the greens well and finely chop the tambouras. In a deep pot, add the greens, the pumpkin, a little oil, salt, pepper, 2 tablespoons of rice (to absorb the liquids) and mix. Roll out the first sheet of dough, oil the baking pan, add the filling, cover with the second sheet of dough and bake at 180°C for 1 hour with top and bottom heat.
