- 1 kilo tambouras (red pumpkin), cleaned and cut into large pieces
- 2 dry onions, cleaned and cut in half
- 2 large potatoes
- 1 clove of garlic (optional)
- 2 medium carrots
- 1 coffee cup of oil
- salt & pepper
- 500 g vegetable stock

A beautiful, tasty, healthy soup with a sweet flavor but also a strong color. A large “tambouras,” that is the red pumpkin, has plenty of flesh. Traditionally, it was used in pies, sweet little bourekakia, grilled over charcoal, but also in a soup like this one.

Add all the vegetables to a pot with the oil. Cover the pot for 3 minutes so the vegetables release their juices. Add the vegetable stock and the salt and pepper, and leave it to simmer on low heat for 20 minutes, until the vegetables fall apart. Turn off the heat and, when the boiling subsides, pour all the soup into a blender to purée it. Put it back into the pot and let it come to a boil again over very low heat. Add 2 tablespoons of butter and extra pepper. Serve hot in bowls with 2 tablespoons of yogurt or cream cheese or heavy cream. Optionally, add some croutons or a few drops of Tabasco.
