- 650 g acorn cherry tomatoes

The “sweet acorns” are cherry tomatoes. The name “acorn” refers to the shape of the fruit, while the word “sweet” describes their taste, as in the case of the cherry tomato. The acorn cherry tomatoes are cherry tomatoes whose shape resembles an acorn, usually small and elongated or round, depending on the variety. They may be sweet, fruity, or more intense in flavor, again depending on the variety. Choose tomatoes that are firm and not overly ripe, so that they keep their shape during boiling. They are served plain or with yogurt. To make a cherry tomato spoon sweet, you need care and love, so that their freshness is captured in syrups using only sugar and lemon. In Greece, spoon sweets have evolved into a local product, since, apart from the usual ones (sour cherry, cherry, quince, etc.), the distinctive products of the Greek countryside that thrive in certain areas make excellent spoon sweets with a special flavor. In the past, special silverware was used for spoon sweets, silver bowls with the little spoons hanging all around them.

Choose firm red cherry tomatoes. Wash them very well and, with a sharp-pointed knife, cut out the stem, creating a small hollow. Drop them into a saucepan with plenty of boiling water and leave for 5 minutes. Drain and immediately transfer them to a bowl with cold water and ice. In this way, they will peel more easily. After peeling, keep the cherry tomatoes in a colander until you use them. You can put them in a bowl with the juice of half a lemon and enough water to cover them for two hours and, this way, the cherry tomatoes will not turn sugary.
In a pot, add the water, sugar, cinnamon stick, and cloves and boil over high heat for about 5–7 minutes. Then add the cherry tomatoes and swirl the pot in a circular motion. Continue boiling over medium heat for about 10 minutes, until the syrup thickens. When the time has passed, add the scented geranium and the lemon juice and let it come to a boil once more. To check the syrup, if you have a special thermometer, it will be ready when it reaches 105–110 degrees.
Another way is to place a small plate in the fridge and drop a few drops of syrup onto it; if the drops remain round, it is ready. Remove from the heat and cover with a towel, leaving it for a while so the temperature of the sweet drops, and transfer to sterilized warm jars. Seal the jars well and turn them upside down on a towel; leave them until they have completely cooled and store in a cool and shady place. Once you open a jar, it keeps in the fridge for about 10 days. (The ratio of ingredients will yield about 2 jars of 250 ml.)
