- 500 g all-purpose tea-cup flour
- 2 tbsp olive oil
- 1/2 tsp salt
- about 300 ml lukewarm water
- 1 ½ teacups oil or melted butter
- 1/2 teacup grated dried mizithra cheese

The handmade macaroni are also called “macaroni tou spartou” (of the spart), because they are shaped by hand, using the spart, or otherwise the bulrush, a thin reed around which the dough is wrapped in order to create the characteristic hole in the middle of the short pasta. These plants are bulrushes that are found mainly in Kalamyari and Fourkero, two areas in Oinousses where they grow in abundance. Of course, if you cannot find bulrushes, you can use thin wooden skewers.

For the handmade macaroni, start by mixing the flour, oil and a little salt in a deep bowl or in the mixer bowl. Gradually add the water, kneading for quite some time (about 10 minutes), until you obtain a uniform, pliable and somewhat firm dough. Shape it into a ball, cover with plastic wrap and set the dough aside for about 1 hour to rest. Spread a sheet of baking paper on a smooth surface and sprinkle it with a little flour. Cut small pieces of dough, about the size of a medium olive, and place them on the baking paper. Sprinkle them with a little flour so they don’t stick. Wrap each little piece of dough around the spart or a wooden skewer and rub quickly with both your palms around the dough, so that it lengthens and takes on its characteristic shape. Remove the skewer and thus the macaroni remains with the hole in the middle. Spread them out on the floured baking paper and, if you wish, boil them immediately.
(Alternatively, let them dry for one day, place them in a well-sealed bowl in the refrigerator and use them whenever you wish.)
In a pot with plenty of boiling salted water, boil the pasta for about 15 minutes, until they soften and rise to the surface. Drain them and place them on a serving platter. Heat the oil or butter in a small pan over high heat until very hot, add the cheese and stir for 1–2 minutes, until it browns. While it is still sizzling hot, pour it over the macaroni, toss lightly and serve, if you like, with a little extra cheese.
