Little pies with red pumpkin (tambouras)

ΥΛΙΚΑ

  • 1.5 kilos pumpkin, grated (grated the night before so that most of its liquids are released)
  • 2 medium dry onions, grated
  • 1 cup Carolina rice, well rinsed
  • 1 handful of mint (preferably dried for a more intense aroma)
  • salt & pepper
  • 1 coffee cup olive oil
  • grated cheese, optional (local goat cheese recommended)
  • 600 g all-purpose flour
  • 1 wine glass (not full) olive oil, three to four tablespoons
  • vinegar
  • a pinch of salt
  • water (as much as needed to knead the flour)

Apart from being a stringed musical instrument, “tambouras” is also what we call the yellow or red pumpkin, while we use the same name for pies made with pumpkin. If you like, instead of making individual little pies, you can prepare one large, single pie and bake it in the oven.

First, prepare the dough and set it aside to rest. In a bowl, put the grated pumpkin, the rice, the mint, the salt, the pepper, the onion and the oil and mix them well. The filling is ready. Do not boil the rice; wash it well and it will cook perfectly with the moisture from the pumpkin.
To roll out the sheets, take the dough and divide it into small balls, each of which will become one sheet for making your little pies. The dough should always be kept covered so it doesn’t dry out. You should also sprinkle a little flour on top. With a rolling pin, roll out the sheet, dusting a bit of flour on the table so the dough doesn’t stick. When you have rolled out the sheet well, cut the dough in half with a knife and you will have two little pies. Using a tablespoon, take a generous amount of filling and place it on the sheet you rolled out. After you roll the dough up well to form a roll, twist it into a snail shape. Put plenty of olive oil in a frying pan for frying. For frying, let the oil get hot and then drop in the little pies until they turn golden brown. Optionally, for serving, sprinkle a bit of grated goat cheese on top.

Venizelika of Limnos
After the liberation of Lemnos from the Ottoman yoke in 1912 and, subsequently, with its incorporation into the Greek state, the island was visited by Eleftherios Venizelos. After disembarking at Romeikos Gialos in Myrina, where a crowd had gathered to welcome him, he sampled the treats that had been prepared for him.
