Περιγραφή
It is also called ntomatli kiofte. It is a related dish to Smyrna-style soutzoukakia, but at the same time quite different. Because the egg white tightens the mixture when cooked, if you want it fluffy, use only the egg yolk. They need quite a long time of kneading, and the better the kneading is done, the better all the ingredients bind together.
Εκτέλεση
For the Smyrna-style meatballs, start by putting all the ingredients for the meatballs into a large bowl and knead them well and vigorously for at least 20 minutes. Cover the bowl with plastic wrap and leave it in the fridge to rest for 30 minutes. In a small pot add the oil and the tomato paste. Stir over high heat and sauté for 1–2 minutes. Add the tomatoes and water, season with salt and pepper, and boil over medium-high heat for about 15 minutes or until the sauce thickens slightly. Meanwhile, in a large frying pan pour in enough oil to cover 1/3 of the pan and heat it over high heat. Fry the potatoes in batches for about 2–3 minutes, just until they soften slightly. Remove them with a slotted spoon and spread them in a medium baking pan. Preheat the oven to 220°C. Shape the minced meat mixture into elongated meatballs (like soutzoukakia) and fry them lightly in batches in the same pan for about another 2 minutes, until they are lightly browned. Remove them with a slotted spoon and arrange them in the baking pan on top of the potatoes, one next to the other, so that they touch and no empty space remains. On top, spread the tomatoes and peppers alternately and neatly. Pour over the tomato sauce and bake for about 15 minutes, until all the ingredients are well cooked.
