  • 1 kilo snails
  • 200 g fresh tomato, peeled and finely chopped
  • 200 g oil
  • 1 dry onion, finely chopped
  • 1 liter hot water
  • 2 cups rice
  • salt & pepper
  • mint

For preparing the snails: Remove the membrane, place the snails in a basin of water and leave them in until they stick their heads out; separate them if they are stuck together and discard any that have not stuck their heads out. Put water halfway up a pot and, as soon as it boils, add the snails and leave them for ten minutes. Then discard the water and clean them well, removing any other impurities from their shells. Rinse them with plenty of water and they are ready to cook. Put the oil in the pot and, once it is hot, add the snails and leave them for 10 minutes. Add the dry onion and, once it is sautéed, continue by adding the tomato, 1 liter of hot water, salt. After the ingredients have boiled for 20 minutes, add the rice. Leave the dish on a low heat for about 20 minutes, stirring constantly until it absorbs the liquids. Serve hot.

Venizelika of Limnos
After the liberation of Lemnos from the Ottoman yoke in 1912 and, subsequently, with its incorporation into the Greek state, the island was visited by Eleftherios Venizelos. After disembarking at Romeikos Gialos in Myrina, where a crowd had gathered to welcome him, he sampled the treats that had been prepared for him.
