  • 400 g rose petals, ideally from May roses (absolutely unsprayed), washed and well dried
  • 1,200 g sugar
  • 1,800 ml water
  • 2 tbsp citric acid, diluted in 2 tbsp water

For the rose spoon sweet, start by putting the sugar and water into a saucepan. Boil over medium heat for about 20 minutes. Add the rose petals and boil for another 20–25 minutes, until the sweet thickens and you have a heavy syrup. At the end, add the diluted citric acid. Stir gently and remove from the heat. Divide the rose sweet into sterilized jars.

Venizelika of Limnos
After the liberation of Lemnos from the Ottoman yoke in 1912 and, subsequently, with its incorporation into the Greek state, the island was visited by Eleftherios Venizelos. After disembarking at Romeikos Gialos in Myrina, where a crowd had gathered to welcome him, he sampled the treats that had been prepared for him. Among other things, he showed a particular preference for a small white fondant, filled with walnut and almond. And thus, the little fondants with white icing came to be called “venizelika” (Venizelos sweets).
