ΥΛΙΚΑ

  • lobster or lobsters
  • 1 packet pasta No. 6 or No. 7
  • allspice or pepper
  • salt
  • vegetable cooking fat
  • 1 onion, finely chopped
  • 2 tablespoons tomato paste
  • 1/4 glass of water, red wine
  • 2–3 bay leaves
  • sugar
  • cinnamon stick

Boil your lobster for only 10 minutes in a pot, adding just enough water, carefully, to cover it. If there is more than one lobster, boil for about 20 minutes, again with just enough water to cover them. Remove the lobster or lobsters from the pot with the boiling water and keep the water aside. Then place the lobster in another pot with the shell and add a little cooking fat. Once it turns red, add the finely chopped onion, 2 tablespoons tomato paste, 1 teaspoon cooking fat, 1/4 glass of red wine, pepper or allspice, and 2–3 bay leaves. Let it all simmer for 10 minutes and then add a cinnamon stick. Top up with the water in which you boiled the lobster and reserved, and add one tablespoon sugar and a little salt. When the sauce is ready, put 1 packet of pasta in the pot and boil it in the sauce for 6 minutes. Serve immediately.

Venizelika of Limnos
After the liberation of Lemnos from the Ottoman yoke in 1912 and, subsequently, with its incorporation into the Greek state, the island was visited by Eleftherios Venizelos.
