  • 1 kilo prickly pears, peeled
  • 600 g sugar
  • Juice and zest of 1 lime

To prepare the prickly pear jam, purée the prickly pears and pass them through a sieve to remove the seeds. First, to make the purée, cut the peeled prickly pears into pieces, put them in the blender and purée them. Pour the purée into a fine metal sieve or food mill and, using a ladle, press so that the juice and flesh pass through, leaving the seeds behind. Put the purée, the sugar and the lime juice in a saucepan and stir. Boil over medium to low heat for about 30 minutes, until the jam thickens. To peel the prickly pears, one way is to hold them with a fork, place them on a cutting board, cut off both ends with a knife, score them lengthwise, not too deeply, just enough so you can peel them, unrolling the skin with the knife. Another way is to rinse them carefully under the tap and, just as carefully, place them in a basin of iced water and leave them for two to three hours so that the tiny spines soften. Many will remain in the water; you will remove the rest with a brush and then peel them.

Venizelika of Limnos
