ΥΛΙΚΑ

  • 1 glass corn starch
  • 1 glass sugar
  • 6 glasses water
  • 1 shot glass rosewater
  • 1 glass blanched almonds

Περιγραφή

This fragrant, rosewater-scented and light little dessert comes from Lesvos. It was given to women who had just given birth, in order to strengthen them and to ensure they had enough milk to breastfeed their baby, since it is a starchy sweet with sugar and nuts.

Εκτέλεση

In a large pot, put one of the six glasses of water, the sugar and the corn starch. Stir well until the corn starch dissolves. Place the pot over medium heat and add the remaining 5 glasses of water. Stir constantly until it begins to boil, becomes transparent and thickens. When it has boiled for about five minutes, remove it from the heat and add the rosewater, which will give the cream an intoxicating citrus aroma. Divide it into bowls. On top, sprinkle blanched almonds, coarsely chopped. Serve once cooled, or chilled from the refrigerator.
How to blanch the almonds: In a large small pot (briki) bring water to a boil. As soon as it boils, remove from the heat and add the almonds. Leave them for a few minutes. Discard the boiling water and refill the pot with cold water. Leave them a few minutes to cool and, in this way, they are easily peeled. Rinse them, so they remain white, and dry them with kitchen paper. Now they are ready to use.

Venizelika of Limnos
After the liberation of Lemnos from the Ottoman yoke in 1912 and, subsequently, with its incorporation into the Greek state, the island was visited by Eleftherios Venizelos.
